Maple Pumpkin Pie

  • 1-9 inch single pie crust
  • 2 cups pumpkin pie puree
  • 1 1/4 cups whipping cream
  • 3/4 cup maple syrup
  • 3 eggs
  • 1 tsp. vanilla
  • 1/2 tsp. ground all spice
  • 1/2 tsp. nutmeg
  • 1/2 tsp. ground ginger

Preheat oven to 400 F.
Mix pumpkin, whipping cream, maple syrup, eggs, vanilla and spices together in a large bowl.  Pour filling into pie crust and bake until pastry is golden brown and filling is set.
Usually around 50 minutes.  Cool before serving. Serve with whipped cream.

Makes 8 servings
