Maple Coffee Cake

  • 1 cup raisins
  • 1 cup coarsely chopped pecans
  • 1 tsp. baking soda
  • 1 tsp. baking power
  • 1 cup strong coffee, boiling
  • ½ cup butter
  • ¾ cup maple syrup
  • 2 eggs
  • ½ tsp. salt
  • 2 tsp. cinnamon
  • 1 1/3 cups flour
  • 1 tbsp. lemon juice

Combine raisins, pecans, baking soda, and baking powder.  Add boiling coffee and set aside to cool in a separate bowl mix butter and maple syrup.  Add eggs, one at a time.  Mix salt, cinnamon, flour and add, alternately with raisin mixture, to the butter and maple syrup.  Stir in lemon juice and pour batter into a greased and floured 8x12" cake pan.
Bake at 350F for 45 minutes. Serve warm with whip cream sweetened with maple syrup.
